Omelette with leek flatbread
The Omelette leeks that I propose in this recipe is very tasty. Serve with small tortillas that you can prepare with my recipe: http://www.aboutappetite.com/le-mie-ricette/cucina/Piadina, or with those found on the market. Try it is an alternative to the usual omelette.
Ingredients

- 4 whole eggs
- 1 large or 2 small leeks
- 1 heaping tablespoon Parmesan
- 50 g Emmenthal cut into small cubes
- salt
- parsley
- 30 g milk

I clean, wash and cut the leek into thin slices.

I put oil in the pan and when it is hot to the omelet.

Cover with a lid and let cook over low heat until the frittata thickens.

I slide the omelette on the lid and the pot upside down.

I continue to cook for 3-4 minutes.
