Sweet Castle
The Belly of the castle is a special cake for the ingredients for the preparation method. The first time I prepared this cake I was inspired to fruit puddings. The idea of the name "Sweet Castle" is a recent history: the 10th and 11th September, I participated in Dulcinea, a celebration held at the Castello di Legnano, where we have made this cake in the company of an audience that has demonstrated very concerned. The cake has got a great success!
Ingredients

- 2 golden apples
- 125g pitted prunes
- 125g dried apricots
- 125g soft butter
- 150 g sugar
- 4 eggs
- 70 gr flour 00
- 1 heaped teaspoon of baking powder
- 1 generous handful of pine nuts
- salt - lemon zest
Process

The fruit must not cook, but you only need to blend the flavors.

Beat butter and sugar until creamy, add egg yolks one at a time and stir until the mixture is homogeneous.

Add the sifted flour and baking powder, salt, lemon zest and finally the egg whites until stiff.

Lie with the previously prepared fruit over the pine nuts trying not to move.

I put the cake batter gently over the fruit.
